Overview

Southern Illinois University's multidisciplinary program in fermentation science offers a curriculum that immerses each student in the fundamentals of fermentation from day one. This program prepares students to pursue individual career paths with an in-depth understanding of the science behind fermentation and practical training in various fields of study. The newly renovated, 60,000 square-foot open design FSI building facilitates classroom and laboratory instruction, research opportunities, and outreach activities in the industry all within one location. A focus on vertical integration allows for learning about numerous aspects of the fermentation science industry using the available equipment and facilities. From the first day of instruction, students will be immersed in the theoretical aspects and hands-on practice of alcoholic beverage production, food fermentation, and industrial fermentation. Beer, wine, and distilled spirits, along with the production of food items such as yogurt, sourdough, kombucha, kimchi, sauerkraut, and cheese, are significant industries in the field of fermentation science. Beyond the production of fermented food and beverages, the program covers fermentation in biotechnology, the pharmaceutical applications of fermentation, and the agricultural elements of fermentation science. Graduates are well prepared to enter the fermentation science industry with hands-on technical training in world-class pilot facilities and a curriculum that addresses the most recent theoretical elements of fermentation science. The production and analysis of beverages and fermented foods, as well as industrial fermentation related to energy, materials, and pharmaceuticals, are the cornerstones of this unique and in-depth institute.

OPT and STEM OPT eligibility depend on maintaining F-1 status and on the program. A program counts as STEM only when its CIP code is on the official STEM list — not because its name sounds technical.
